Chestnut Mushroom Risotto with Chicken Broth

A Delicious Italian-Inspired Recipe with Zel Global Chicken Broth

Ingredients:

  • 1 cup risotto rice
  • 1 small onion
  • 1 cup chestnut mushrooms
  • 2 sprigs of fresh thyme
  • 1 teaspoon soy sauce

Instructions:

Smallly dice the onion.

Chop the chestnut mushrooms and sauté them in a pan with 2 sprigs of fresh thyme.

In a separate pan, add the chopped onions and risotto rice and begin sautéing.

When the rice begins to turn translucent, gradually add the Zel Global chicken broth, stirring constantly. Let the rice absorb the liquid after each addition.

Once the rice is tender and the risotto has thickened, remove from the heat.

Add the cold butter and grated Parmesan cheese, stirring once more.

Serve hot with the sautéed mushrooms.
