Winter Soup Recipe with Bone Broth and Roast Meat

How about a delicious soup recipe that will both warm you up and boost your immune system on cold winter days? This vegetable soup, blended with the flavor of bone marrow and tandoori roasted meat, will be a must-have on your dinner table.

Ingredients:

  • 1 medium celery root
  • 1 carrot
  • 1 potato
  • 1 onion
  • 3 tablespoons olive oil
  • 1 cup bone marrow broth
  • 1 bowl tandoori roasted meat
  • 4 cups water (optional)
  • Salt and pepper
  • For the topping: Mint and finely chopped parsley
  • For the roux:
  • 1 tablespoon flour
  • 1 tablespoon yogurt
  • 1 egg yolk
  • Juice of half a lemon

Instructions:

Prepare the Vegetables:
Peel and dice the medium celery root into small cubes. Similarly, dice the carrots, potatoes, and onions into small cubes.

Roast the Vegetables:
Pour olive oil into a pot, add the chopped vegetables, and sauté over medium heat for 5-6 minutes.

Add the Meat and Bone Broth:
Add the bone broth and tandoori-style roasted meat to the roasted vegetables. Then, add the hot water and bring to a boil.

Prepare the Roux:
In a bowl, whisk together the flour, yogurt, egg yolk, and lemon juice. Gradually add the hot soup water to the mixture, stirring constantly.

Add the Roux:
Gently pour the prepared rox into the soup and simmer for a few more minutes.

Serving:
Season with salt and pepper. Sprinkle with mint and finely chopped parsley before serving.
