Materials
- 1 medium-sized celery stalk
- 1 carrot
- 1 potato
- 1 dry onion
- 3 tablespoons of olive oil
- 1 cup bone broth
- 1 bowl of tandoor-style roasted meat
- 4 glasses of water (can be increased upon request)
- Salt, pepper
- For topping: Mint and finely chopped parsley
For the roux
- 1 tablespoon of flour
- 1 tablespoon of yogurt
- 1 egg yolk
- Juice of half a lemon
Preparation
1. Prepare the vegetables.
Prepare the celery, carrots, potatoes, and onions by chopping them into small cubes.
2. Sauté the vegetables.
Pour olive oil into a saucepan and add the chopped vegetables, sautéing over medium heat for 5-6 minutes.
3. Add the meat and broth.
Add the bone broth and tandoor-style roasted meat to the sautéed vegetables. Then add hot water and bring to a boil.
4. Prepare the roux.
In a bowl, whisk together the flour, yogurt, egg yolk, and lemon juice. Gradually add some of the hot soup broth to the mixture, tempering it to prevent curdling.
5. Add the roux.
Slowly add the prepared roux to the soup and simmer for a few more minutes, stirring constantly.
6. Service
Season with salt and pepper. Sprinkle with mint and finely chopped parsley when serving and serve hot.
